Split Pea & Carrot Soup

Dried split peas are incredibly cheap and packed with protein and fibre. They break down into a thick, satisfying soup. This version uses carrots for sweetness and a stock cube for flavour. It's humble, hearty, and costs almost nothing.

Ingredients (Serves 4):
- 250g dried yellow or green split peas, rinsed (50p)
- 2 carrots, chopped (20p)
- 1 onion, chopped (10p)
- 1 vegetable stock cube (5p)
- 1.2 litres water
Method:
- Put everything in a large pot. Bring to a boil, then reduce the heat and simmer gently for 45–50 minutes until the peas have completely broken down. Stir occasionally, and add more water if it gets too thick.
- Blend if you want it smooth, or leave it rustic. Season with salt and pepper.
Why it's gut-friendly: Split peas are packed with soluble fibre, feeding good gut bacteria. Carrots add extra prebiotic fibre. A very cheap, very nourishing soup.
