Split Pea & Carrot Soup

Dried split peas are incredibly cheap and packed with protein and fibre. They break down into a thick, satisfying soup. This version uses carrots for sweetness and a stock cube for flavour. It's humble, hearty, and costs almost nothing.

Ingredients (Serves 4):

  • 250g dried yellow or green split peas, rinsed (50p)
  • 2 carrots, chopped (20p)
  • 1 onion, chopped (10p)
  • 1 vegetable stock cube (5p)
  • 1.2 litres water

Method:

  1. Put everything in a large pot. Bring to a boil, then reduce the heat and simmer gently for 45–50 minutes until the peas have completely broken down. Stir occasionally, and add more water if it gets too thick.
  2. Blend if you want it smooth, or leave it rustic. Season with salt and pepper.

Why it's gut-friendly: Split peas are packed with soluble fibre, feeding good gut bacteria. Carrots add extra prebiotic fibre. A very cheap, very nourishing soup.
