Simple Rice Pudding

Rice pudding made with just rice, milk, and a spoonful of sugar. It's warm, creamy, and deeply comforting. A proper old-school dessert that costs almost nothing. Use whatever milk you have—whole milk makes it richer, but any kind works.

Ingredients (Serves 2–3):
- 100g pudding rice (or any short-grain rice) (20p)
- 600ml milk (50p)
- 2 tbsp sugar or honey (10p)
- A pinch of nutmeg or cinnamon (optional)
Method:
- Put the rice, milk, and sugar in a saucepan. Bring to a very gentle simmer.
- Cook, stirring frequently, for 30–35 minutes until the rice is tender and the pudding is thick and creamy.
- Sprinkle with a little nutmeg or cinnamon if you have it. Eat warm.
Why it's gut-friendly: Rice pudding is easy to digest and very soothing for the stomach. Using whole milk adds protein and fat. A gentle, comforting dessert.
