Lentil Bolognese

A plant-based Bolognese that's rich, savoury, and costs a fraction of the meat version. Dried lentils replace the mince, and tinned tomatoes do the heavy lifting. Serve over spaghetti for a proper, filling dinner.

Ingredients (Serves 4):
- 200g dried green or brown lentils, rinsed (40p)
- 1 x 400g tin of chopped tomatoes (35p)
- 1 onion, chopped (10p)
- 1 carrot, grated (10p)
- 1 tsp dried mixed herbs (5p)
- 1 vegetable stock cube (5p)
- 300ml water
- Spaghetti to serve (20p per portion)
Method:
- Cook the onion in a little oil. Add the carrot, lentils, tomatoes, herbs, stock cube, and water.
- Simmer for 30–35 minutes until the lentils are tender and the sauce is thick. Add more water if needed.
- Serve over cooked spaghetti.
Why it's gut-friendly: Lentils are a prebiotic powerhouse. Carrots and onions add extra fibre. Tomatoes are rich in lycopene. A very gut-friendly, budget-friendly dinner.
