Lentil Bolognese

A plant-based Bolognese that's rich, savoury, and costs a fraction of the meat version. Dried lentils replace the mince, and tinned tomatoes do the heavy lifting. Serve over spaghetti for a proper, filling dinner.

Ingredients (Serves 4):

  • 200g dried green or brown lentils, rinsed (40p)
  • 1 x 400g tin of chopped tomatoes (35p)
  • 1 onion, chopped (10p)
  • 1 carrot, grated (10p)
  • 1 tsp dried mixed herbs (5p)
  • 1 vegetable stock cube (5p)
  • 300ml water
  • Spaghetti to serve (20p per portion)

Method:

  1. Cook the onion in a little oil. Add the carrot, lentils, tomatoes, herbs, stock cube, and water.
  2. Simmer for 30–35 minutes until the lentils are tender and the sauce is thick. Add more water if needed.
  3. Serve over cooked spaghetti.

Why it's gut-friendly: Lentils are a prebiotic powerhouse. Carrots and onions add extra fibre. Tomatoes are rich in lycopene. A very gut-friendly, budget-friendly dinner.
