Egg Fried Rice with Frozen Peas

This is the ultimate cheap, fast meal. Leftover rice (or a sachet of instant rice) stir-fried with an egg, a handful of frozen peas, and a splash of soy sauce. It's warm, savoury, and takes about three minutes.

Ingredients (Serves 1):
- 150g cooked rice (leftover is perfect, or 1 sachet instant rice, 25p)
- 1 egg (18p)
- A handful of frozen peas (10p)
- 1 tsp soy sauce (2p)
- A drizzle of oil
Method:
- Heat a little oil in a wok or frying pan. Add the cold rice and stir-fry for 2 minutes.
- Push the rice to one side. Crack the egg into the empty space and scramble it quickly.
- Add the frozen peas and soy sauce. Stir everything together and cook for another 1–2 minutes until the peas are hot.
Why it's gut-friendly: Rice is easily digestible, especially when cooled and reheated (which creates resistant starch). Peas add fibre. Eggs provide protein. A very gentle, quick meal.
