Miso Soup with Silken Tofu & Wakame

Miso paste is a gut-health superhero—it's fermented, packed with probiotics, and all you need is hot water. Silken tofu requires no cooking, and dried wakame seaweed rehydrates in seconds. This is my go-to when I need something warm and savoury but can't face anything more involved.
Ingredients (Serves 1):
- 1 tbsp white miso paste
- 300ml boiling water
- 50g silken tofu, cubed
- A pinch of dried wakame seaweed
- 1 spring onion, finely sliced (optional, if you have one)
- A drop of sesame oil
Method:
- Put the miso paste in a mug or bowl. Add a splash of the boiling water and stir until smooth.
- Top up with the remaining water. Add the tofu and wakame.
- Let it sit for 2–3 minutes. The wakame will expand and the tofu will warm through.
- Top with spring onion and a drop of sesame oil if you have them.
Why it's gut-friendly: Miso is a fermented probiotic food. Tofu is easy to digest and provides plant protein. Wakame is a sea vegetable rich in minerals and prebiotic fibre.
