Instant Polenta with Parmesan & Olive Oil

Instant polenta just needs hot water and a stir. It's creamy, comforting, and a great alternative to porridge for a savoury meal. Add a little Parmesan and a drizzle of olive oil, and you've got a proper warm bowl of something.

Ingredients (Serves 1):

  • 50g instant polenta
  • 200ml boiling water
  • A pinch of salt
  • 1 tbsp grated Parmesan (or nutritional yeast for dairy-free)
  • A drizzle of extra virgin olive oil
  • Black pepper

Method:

  1. Put the polenta and salt in a bowl. Pour over the boiling water, stirring constantly with a fork to prevent lumps.
  2. Stir in the Parmesan and oil. Let it sit for 2–3 minutes to thicken.
  3. Grind over some black pepper and eat.

Why it's gut-friendly: Polenta (cornmeal) is naturally gluten-free and very easy to digest. Parmesan is a fermented cheese, providing a small probiotic boost. Olive oil is anti-inflammatory.
