Instant Polenta with Parmesan & Olive Oil

Instant polenta just needs hot water and a stir. It's creamy, comforting, and a great alternative to porridge for a savoury meal. Add a little Parmesan and a drizzle of olive oil, and you've got a proper warm bowl of something.
Ingredients (Serves 1):
- 50g instant polenta
- 200ml boiling water
- A pinch of salt
- 1 tbsp grated Parmesan (or nutritional yeast for dairy-free)
- A drizzle of extra virgin olive oil
- Black pepper
Method:
- Put the polenta and salt in a bowl. Pour over the boiling water, stirring constantly with a fork to prevent lumps.
- Stir in the Parmesan and oil. Let it sit for 2–3 minutes to thicken.
- Grind over some black pepper and eat.
Why it's gut-friendly: Polenta (cornmeal) is naturally gluten-free and very easy to digest. Parmesan is a fermented cheese, providing a small probiotic boost. Olive oil is anti-inflammatory.
