A Mug of Creamy Tomato Soup (from Passata)

This isn't the canned stuff. Passata (sieved tomatoes) mixed with a splash of hot water, a pinch of herbs, and a dollop of cream cheese or crème fraîche. It's smooth, warm, and genuinely comforting.
Ingredients (Serves 1):
- 150ml passata
- 100ml boiling water
- 1 tbsp cream cheese or a splash of single cream
- A pinch of dried basil or oregano
- Salt and pepper
- A drizzle of olive oil
Method:
- Put the passata and hot water in a large mug. Stir well.
- Stir in the cream cheese until it melts into the soup. Add the herbs, salt, and pepper.
- Microwave for 1 minute to heat through, if you have one. If not, just make sure your water is very hot and drink it immediately. Drizzle with olive oil.
Why it's gut-friendly: Tomatoes are rich in lycopene, an antioxidant. Olive oil is anti-inflammatory. A very light, warm, satisfying meal in a mug.
