Smooth Carrot & Potato Mash

This is comfort in a bowl. Equal parts carrot and potato, boiled until very soft, then mashed with butter until completely smooth. It's sweet, savoury, and a beautiful pale orange. No pepper, no herbs, no surprises. Just soft, warm, vitamin-packed mash.
Ingredients (Serves 2):
- 2 large carrots, peeled and chopped
- 2 large potatoes, peeled and chopped
- A generous knob of butter
- A splash of milk
- Salt
Method:
- Boil the carrots and potatoes in salted water until very tender (about 15–20 minutes).
- Drain thoroughly. Return to the hot pan to steam off any excess moisture.
- Add the butter and milk. Mash until completely smooth. For extra smoothness, use a stick blender or food processor.
- Taste and add salt if needed. Eat warm.
