Silky Sweet Potato & Red Lentil Soup

This soup is blended until completely smooth—no bits, no texture, just a silky, golden-orange bowl of warmth. The red lentils melt into the soup, adding protein and fibre without changing the texture. It's mild, slightly sweet, and deeply comforting.
Ingredients (Serves 3–4):
- 1 large sweet potato, peeled and chopped
- 100g red lentils, rinsed
- 500ml vegetable stock
- ½ tsp salt
- A drizzle of cream or coconut milk (optional, for extra smoothness)
Method:
- Put the sweet potato, lentils, and stock in a saucepan.
- Bring to a boil, then reduce heat and simmer for 20 minutes until everything is very tender.
- Blend with a stick blender until completely smooth. For extra silkiness, pass through a sieve.
- Season with salt. Swirl in a little cream or coconut milk if you like.
Sensory profile: Completely smooth, silky, and uniform. Mildly sweet, no spices, no texture.
Why it's gut-friendly: Sweet potatoes are rich in soluble fibre and vitamin A. Red lentils are one of the easiest pulses to digest. A very gentle, nourishing soup.
