Creamy Polenta with Butter & Parmesan

Polenta is one of the most sensory-safe foods I know. It's smooth, creamy, and completely uniform—no lumps, no surprises, just a warm, soft bowl of comfort. This version is enriched with a little butter and Parmesan, making it savoury and satisfying without being overwhelming.

Ingredients (Serves 1):

  • 50g instant polenta
  • 200ml water
  • A pinch of salt
  • A small knob of butter
  • 20g Parmesan, finely grated

Method:

  1. Bring the water and salt to a boil. Slowly whisk in the polenta.
  2. Cook, stirring constantly, for 3–5 minutes until thick and smooth.
  3. Remove from heat. Stir in the butter and Parmesan until melted and glossy.
  4. Eat immediately, while it's still soft and creamy.

Sensory profile: Smooth, soft, uniform. No lumps if whisked properly. Mild, salty, comforting.

Why it's gut-friendly: Polenta (cornmeal) is naturally gluten-free and very easy to digest. Parmesan is a fermented cheese, providing a small probiotic boost.
