Creamy Polenta with Butter & Parmesan

Polenta is one of the most sensory-safe foods I know. It's smooth, creamy, and completely uniform—no lumps, no surprises, just a warm, soft bowl of comfort. This version is enriched with a little butter and Parmesan, making it savoury and satisfying without being overwhelming.
Ingredients (Serves 1):
- 50g instant polenta
- 200ml water
- A pinch of salt
- A small knob of butter
- 20g Parmesan, finely grated
Method:
- Bring the water and salt to a boil. Slowly whisk in the polenta.
- Cook, stirring constantly, for 3–5 minutes until thick and smooth.
- Remove from heat. Stir in the butter and Parmesan until melted and glossy.
- Eat immediately, while it's still soft and creamy.
Sensory profile: Smooth, soft, uniform. No lumps if whisked properly. Mild, salty, comforting.
Why it's gut-friendly: Polenta (cornmeal) is naturally gluten-free and very easy to digest. Parmesan is a fermented cheese, providing a small probiotic boost.
