Tuna & Sweetcorn Rice Bowl

This is the meal for when you need something fast, filling, and entirely from the cupboard. Instant rice, tinned tuna, tinned sweetcorn, and a soy-sesame dressing. It taes five minutes and requires no fresh ingredients at all.
Ingredients (Serves 1):
- 1 sachet of instant rice (or 150g cooked rice from a pouch)
- 1 x 145g tin of tuna in spring water, drained
- ½ x 200g tin of sweetcorn, drained
- 1 tbsp soy sauce or tamari
- 1 tsp sesame oil
- A sprinkle of sesame seeds (optional)
Method:
- Cook the instant rice according to packet instructions (usually just add boiling water and wait).
- Fluff the rice. Top with the tuna and sweetcorn.
- Drizzle with soy sauce and sesame oil. Scatter with sesame seeds if you have them.
Why it's gut-friendly: Tuna provides lean protein and omega-3s. Rice is easy to digest. Sweetcorn adds fibre. Sesame oil is anti-inflammatory.
