Simple Polenta with Tinned Ratatouille

Instant polenta and a tin of ratatouille. That's it. The polenta cooks in five minutes with just boiling water and a pinch of salt. The ratatouille is a ready-made vegetable stew. Together, they're a warming, comforting meal that's entirely from the cupboard.
Ingredients (Serves 1):
- 50g instant polenta
- 200ml boiling water
- A pinch of salt
- 1 x 400g tin of ratatouille
- A drizzle of olive oil
Method:
- Put the polenta and salt in a bowl. Pour over the boiling water, stirring constantly. Let it sit for 2–3 minutes.
- Meanwhile, warm the ratatouille in a small pan or microwave.
- Spoon the polenta into a bowl. Top with the ratatouille. Drizzle with olive oil.
Why it's gut-friendly: Polenta (cornmeal) is gluten-free and easy to digest. Ratatouille is packed with vegetables in a simple tomato sauce—aubergine, courgette, peppers—all providing fibre. Olive oil supports the gut lining.
