Chickpea & Tuna "Pantry Niçoise"

A deconstructed version of a Niçoise salad, made entirely from tins and jars. Tinned tuna, tinned chickpeas, tinned green beans, and jarred black olives. Toss with olive oil and lemon juice from a bottle. It's substantial, savoury, and surprisingly elegant.
Ingredients (Serves 1–2):
- 1 x 145g tin of tuna in spring water, drained
- ½ x 400g tin of chickpeas, rinsed and drained
- ½ x 200g tin of green beans, drained
- A handful of black olives from a jar
- 1 tbsp olive oil
- 1 tbsp lemon juice (bottled is fine)
- Salt and pepper
Method:
- Put everything in a bowl. Toss gently.
- Eat immediately, or leave for 10 minutes for the flavours to meld.
Why it's gut-friendly: Tuna provides omega-3s. Chickpeas and green beans are prebiotic. Olives and olive oil are anti-inflammatory and support the gut lining.
