Butter Bean & Artichoke Salad

This is the salad for when you have no fresh vegetables. Tinned butter beans, jarred artichoke hearts, and jarred roasted red peppers. Toss with olive oil, lemon juice from a bottle, and a pinch of dried herbs. It's tangy, satisfying, and feels vaguely Mediterranean.

Ingredients (Serves 1–2):

  • 1 x 400g tin of butter beans, rinsed and drained
  • ½ jar of artichoke hearts, drained and roughly chopped
  • ½ jar of roasted red peppers, drained and sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice (bottled is fine)
  • A pinch of dried oregano
  • Salt and pepper

Method:

  1. Put everything in a bowl. Toss gently to combine.
  2. Eat immediately, or leave to marinate for 10 minutes for the flavours to meld.

Why it's gut-friendly: Butter beans are packed with soluble fibre. Artichokes are one of the best prebiotic foods available, feeding good gut bacteria. Olive oil and lemon juice are anti-inflammatory and digestive-friendly.
