Salted Caramel & Pecan Overnight Oats

The "caramel" here is just Medjool dates blended with a pinch of salt and a splash of milk—it tastes decadent but is just fruit. Swirled through the oats and topped with crunchy pecans, it’s a proper treat.

Ingredients (Serves 1):

  • For the date caramel: 3 Medjool dates, pitted, 1 tbsp milk, a pinch of flaky sea salt
  • 50g rolled oats
  • 1 tbsp chia seeds
  • 150ml milk of choice
  • 1 tbsp chopped pecans

Method:

  1. Blitz the dates, 1 tbsp milk, and salt in a small blender until smooth. (Or mash very thoroughly with a fork.)
  2. Mix the oats, chia seeds, and remaining milk. Swirl through the date caramel.
  3. Refrigerate overnight. Top with pecans before eating.

Why it’s gut-friendly: Dates are packed with fibre and natural sweetness. Pecans provide healthy fats and omega-3s. Oats and chia are prebiotic.
