Raspberry & Lemon Overnight Oats

A classic, clean combination. Sharp, sweet raspberries and bright lemon zest. It’s simple, elegant, and almost impossibly refreshing. The raspberries break down into the oats, dying them a gentle pink.
Ingredients (Serves 1):
- 50g rolled oats
- 1 tbsp chia seeds
- Zest and juice of ½ lemon
- 150ml milk of choice
- 1 tsp maple syrup
- 80g raspberries (fresh or frozen)
Method:
- Stir together the oats, chia seeds, lemon zest, lemon juice, milk, and maple syrup. Fold in the raspberries.
- Refrigerate overnight. Stir before eating.
Why it’s gut-friendly: Raspberries are one of the most fibre-rich fruits, packed with polyphenols. Lemon aids digestion. Oats and chia provide prebiotic fibre.
