Piña Colada Overnight Oats

Tropical, creamy, and completely transporting. Pineapple, coconut milk, and a handful of toasted coconut flakes. It’s like a holiday in a jar, with the bonus that you don’t have to put on sun cream.

Ingredients (Serves 1):

  • 50g rolled oats
  • 1 tbsp chia seeds
  • 150ml coconut milk (the drinking kind, or tinned light coconut milk)
  • 80g fresh or tinned pineapple, chopped
  • 1 tsp maple syrup (optional)
  • Toasted coconut flakes to serve

Method:

  1. Mix all ingredients except the coconut flakes. Stir well.
  2. Refrigerate overnight. Top with toasted coconut flakes before eating.

Why it’s gut-friendly: Coconut milk is rich in medium-chain triglycerides that are easy to digest. Pineapple contains bromelain, an enzyme that aids digestion. Oats and chia are prebiotic.
