Peach Melba Overnight Oats

Inspired by the classic dessert, this combines sweet peaches and tart raspberries with a hint of almond. Use tinned peaches in juice (not syrup) or thawed frozen ones. The raspberries break down overnight, creating ribbons of pink.

Ingredients (Serves 1):

  • 50g rolled oats
  • 1 tbsp chia seeds
  • 150ml milk of choice
  • ½ tsp almond extract (optional but lovely)
  • 1 tsp maple syrup
  • 1 peach (tinned or fresh), sliced
  • 80g raspberries (fresh or frozen)

Method:

  1. Stir together the oats, chia seeds, milk, almond extract, and maple syrup. Fold in the peach slices and raspberries.
  2. Refrigerate overnight. Stir before eating.

Why it’s gut-friendly: Peaches are a low-FODMAP fruit, gentle on sensitive stomachs. Raspberries are rich in fibre and polyphenols. Oats and chia provide prebiotic fibre.
