Matcha & Vanilla Overnight Oats

A gentle caffeine boost from matcha, balanced with creamy vanilla. The colour is a soft, calming green, and the flavour is earthy and slightly sweet. If you’re not a matcha person, use half the amount to ease in.
Ingredients (Serves 1):
- 50g rolled oats
- 1 tbsp chia seeds
- ½–1 tsp matcha powder
- ½ tsp vanilla extract
- 150ml milk of choice
- 1 tsp maple syrup
- A dollop of coconut yoghurt to serve
Method:
- Whisk the matcha with a splash of warm water to dissolve it, then mix with all the other ingredients except the yoghurt.
- Refrigerate overnight. Serve with a dollop of coconut yoghurt and an extra dusting of matcha if you like.
Why it’s gut-friendly: Matcha is packed with catechins, a type of polyphenol that feeds good bacteria. Oats and chia provide prebiotic fibre. The L-theanine in matcha promotes calm focus.
