Lemon & Blueberry Overnight Oats

Bright, zesty, and bursting with blueberries. Lemon zest lifts everything, making this taste like a summer morning even when it’s grey outside. The blueberries bleed into the oats overnight, turning them a gentle purple.
Ingredients (Serves 1):
- 50g rolled oats
- 1 tbsp chia seeds
- Zest and juice of ½ lemon
- 150ml milk of choice
- 1 tsp maple syrup
- 80g frozen blueberries
Method:
- Stir together the oats, chia seeds, lemon zest, lemon juice, milk, and maple syrup. Fold in the blueberries.
- Refrigerate overnight. Stir before eating.
