Lemon & Blueberry Overnight Oats

Bright, zesty, and bursting with blueberries. Lemon zest lifts everything, making this taste like a summer morning even when it’s grey outside. The blueberries bleed into the oats overnight, turning them a gentle purple.

Ingredients (Serves 1):

  • 50g rolled oats
  • 1 tbsp chia seeds
  • Zest and juice of ½ lemon
  • 150ml milk of choice
  • 1 tsp maple syrup
  • 80g frozen blueberries

Method:

  1. Stir together the oats, chia seeds, lemon zest, lemon juice, milk, and maple syrup. Fold in the blueberries.
  2. Refrigerate overnight. Stir before eating.

Why it’s gut-friendly: Blueberries are a polyphenol powerhouse. Lemon is a gentle digestive aid. Oats and chia provide prebiotic fibre.
