Gingerbread Overnight Oats

Everything you love about a gingerbread biscuit, in a jar. Black treacle (or molasses) gives it that deep, slightly smoky sweetness, while ginger, cinnamon, and nutmeg bring the warmth. It’s like Christmas morning, any time of year.

Ingredients (Serves 1):

  • 50g rolled oats
  • 1 tbsp chia seeds
  • ½ tsp ground ginger
  • ¼ tsp cinnamon
  • A pinch of nutmeg
  • 1 tsp black treacle or molasses
  • 150ml milk of choice
  • 1 tbsp chopped pecans

Method:

  1. Mix everything except the pecans. Stir well—the treacle takes a bit of work to incorporate.
  2. Refrigerate overnight. Top with pecans in the morning.

Why it’s gut-friendly: Ginger, cinnamon, and nutmeg are all anti-inflammatory and aid digestion. Black treacle contains some minerals like iron. Oats and chia are prebiotic.
