Espresso & Dark Chocolate Overnight Oats

For the coffee lovers. A shot of strong espresso (or strong instant coffee) mixed into the oats gives them a bold, rich flavour. Combined with cocoa and a few dark chocolate chips, it’s the breakfast that feels like a mocha.

Ingredients (Serves 1):

  • 50g rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp cocoa powder
  • 1 shot of espresso (or 1 tsp instant coffee dissolved in 1 tbsp hot water), cooled
  • 150ml milk of choice
  • 1 tsp maple syrup
  • A few dark chocolate chips (70%+)

Method:

  1. Mix everything except the chocolate chips. Stir in the cooled espresso.
  2. Refrigerate overnight. Scatter with chocolate chips in the morning.

Why it’s gut-friendly: Cocoa and coffee both contain polyphenols that feed good gut bacteria (in moderation). Oats and chia provide prebiotic fibre.
