Carrot Cake Overnight Oats

Everything you love about carrot cake, in a jar. Finely grated carrot, cinnamon, ginger, a handful of walnuts, and a dollop of coconut yoghurt swirled through at the end. It’s sweet enough from the carrot and raisins that you barely need any added sugar.

Ingredients (Serves 1):

  • 50g rolled oats
  • 1 tbsp chia seeds
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • 1 small carrot, finely grated
  • 150ml oat milk
  • 1 tbsp raisins
  • 1 tbsp chopped walnuts
  • 1 tbsp coconut yoghurt, to swirl

Method:

  1. Mix everything except the yoghurt in a jar. Stir well.
  2. Cover and refrigerate overnight.
  3. In the morning, swirl through the coconut yoghurt and top with a few extra walnuts.

Why it’s gut-friendly: Carrots are rich in soluble fibre. Walnuts provide omega-3s. Oats and chia seeds are prebiotic powerhouses.
