Apple Pie Overnight Oats

This tastes like a proper dessert but is just oats, apple, cinnamon, and a handful of raisins. Grate the apple straight into the jar—skin and all—so it almost melts into the oats overnight. It’s warm-spiced, gently sweet, and deeply comforting. If you close your eyes, you can almost pretend you’re eating a crumble.
Ingredients (Serves 1):
- 50g rolled oats
- 1 tbsp chia seeds
- ½ tsp cinnamon
- Pinch of nutmeg
- 1 small apple, grated (no need to peel)
- 150ml oat milk
- 1 tbsp raisins
- 1 tsp maple syrup (optional)
Method:
- Put everything in a jar or bowl and stir until well combined.
- Cover and refrigerate overnight (or for at least 4 hours).
- In the morning, stir again. Eat cold or warm gently.
Why it’s gut-friendly: Oats and apple skin are packed with prebiotic fibre. Cinnamon helps stabilise blood sugar. Raisins add natural sweetness and a little extra fibre.
