Nut Butter & Chia Seed "Fudge"

A two-ingredient, no-cook treat. Just mix smooth almond butter (or peanut butter) with a little maple syrup and chia seeds until it forms a thick paste. Press into a small container and refrigerate. It firms up into a fudgy, protein-packed block that you can break into pieces. Eat one-handed.
Ingredients (Makes 6–8 pieces):
- 100g smooth almond butter
- 1 tbsp maple syrup
- 1 tbsp chia seeds (optional, for texture)
Method:
- Mix the almond butter, maple syrup, and chia seeds in a bowl.
- Press into a small container lined with parchment. Refrigerate for at least 2 hours.
- Slice into small squares. Keep in the fridge.
Why it's gut-friendly: Almond butter is rich in vitamin E and healthy fats. Chia seeds are a fibre superstar. A satisfying, sweet treat.
