Tuna & White Bean Lettuce Wraps

A light, protein-packed lunch that requires no cutlery. Tinned tuna, creamy white beans, a squeeze of lemon, and fresh herbs, scooped into crisp lettuce leaves. It's fresh, crunchy, and satisfying. Perfect for eating with your hands.
Ingredients (Serves 1):
- 1 x 145g tin of tuna in spring water, drained
- ½ x 400g tin of cannellini or butter beans, rinsed and drained
- A squeeze of lemon juice
- 1 tbsp olive oil
- A handful of fresh parsley or basil (optional, but lovely)
- Salt and pepper
- 4–6 large lettuce leaves (Little Gem or cos work well)
Method:
- Flake the tuna into a bowl. Add the beans, lemon juice, olive oil, herbs, and seasoning.
- Toss gently to combine.
- Spoon the mixture into the lettuce leaves. Eat immediately, like little boats.
Why it's gut-friendly: Tuna provides lean protein and omega-3s. White beans are a prebiotic fibre source. Lettuce adds hydration and crunch. Olive oil is anti-inflammatory.
