Avocado & Cannellini Bean Smash on Crackers

This is a creamy, satisfying mash made from half an avocado and half a tin of cannellini beans. It's more substantial than plain avocado toast and packed with fibre. Pile it onto oatcakes, Ryvita, or whatever sturdy crackers you have.

Ingredients (Serves 1):

  • ½ ripe avocado
  • ½ x 400g tin of cannellini beans, rinsed and drained
  • A squeeze of lemon or lime juice
  • Salt and pepper
  • A pinch of chilli flakes (optional)
  • 4–6 oatcakes or crackers

Method:

  1. Mash the avocado and beans together with a fork until chunky.
  2. Stir in the lemon juice, salt, pepper, and chilli flakes if using.
  3. Pile onto the crackers and eat immediately.

Why it's gut-friendly: Cannellini beans are packed with soluble fibre. Avocado provides healthy monounsaturated fats and extra fibre. Lemon juice is a gentle digestive aid.
