Almond Butter & Berry Rice Cakes

This is the sweet option. Rice cakes spread thickly with almond butter, topped with fresh berries (or thawed frozen ones), and drizzled with a little honey. It's crunchy, creamy, and feels like a treat, but it's packed with fibre and healthy fats.
Ingredients (Serves 1):
- 2 brown rice cakes
- 2 tbsp almond butter
- A large handful of fresh berries (blueberries, raspberries, sliced strawberries)
- A drizzle of honey or maple syrup (optional)
- A sprinkle of chia seeds
Method:
- Spread the almond butter generously on the rice cakes.
- Pile the berries on top. Drizzle with honey or maple syrup if you like.
- Sprinkle with chia seeds for extra crunch and fibre.
Why it's gut-friendly: Almond butter provides vitamin E and healthy fats. Berries are packed with polyphenols and fibre. Brown rice cakes are whole-grain. Chia seeds are a fibre superstar.
