Almond Butter & Berry Rice Cakes

This is the sweet option. Rice cakes spread thickly with almond butter, topped with fresh berries (or thawed frozen ones), and drizzled with a little honey. It's crunchy, creamy, and feels like a treat, but it's packed with fibre and healthy fats.

Ingredients (Serves 1):

  • 2 brown rice cakes
  • 2 tbsp almond butter
  • A large handful of fresh berries (blueberries, raspberries, sliced strawberries)
  • A drizzle of honey or maple syrup (optional)
  • A sprinkle of chia seeds

Method:

  1. Spread the almond butter generously on the rice cakes.
  2. Pile the berries on top. Drizzle with honey or maple syrup if you like.
  3. Sprinkle with chia seeds for extra crunch and fibre.

Why it's gut-friendly: Almond butter provides vitamin E and healthy fats. Berries are packed with polyphenols and fibre. Brown rice cakes are whole-grain. Chia seeds are a fibre superstar.
