Spiced Roasted Carrot "Fries"

These are not chips. They're carrot batons roasted until crisp and caramelised. Tossed with cumin and smoked paprika, they're sweet, savoury, and surprisingly satisfying. Dip them in yoghurt or hummus.
Ingredients (Serves 1–2):
- 3 large carrots, cut into thin batons
- 1 tbsp olive oil
- ½ tsp ground cumin
- ½ tsp smoked paprika
- Salt
Method:
- Preheat oven to 200°C (180°C fan). Line a baking tray with parchment.
- Toss the carrot batons with olive oil, cumin, paprika, and salt.
- Spread in a single layer. Roast for 20–25 minutes until tender and slightly charred.
- Eat warm.
Why it's gut-friendly: Carrots are rich in fibre and vitamin A. Spices are anti-inflammatory. A healthy, savoury snack.
