Smashed Cucumber with Sesame & Chilli

This is not a recipe. This is an assembly job. Smash a cucumber with a rolling pin (very satisfying), tear it into chunks, and toss with sesame oil, rice vinegar, and a pinch of chilli. It's refreshing, hydrating, and takes about ninety seconds. Perfect for when you want something savoury but can't face cooking.
Ingredients (Serves 1):
- ½ cucumber
- 1 tsp sesame oil
- 1 tsp rice vinegar or lemon juice
- Pinch of chilli flakes
- Pinch of salt
- Sprinkle of sesame seeds
Method:
- Put the cucumber on a chopping board. Smash it with the side of a rolling pin or the flat of a heavy knife until it cracks. Tear into bite-sized chunks.
- Put the cucumber in a bowl. Add the sesame oil, rice vinegar, chilli flakes, and salt. Toss to coat.
- Sprinkle with sesame seeds.
- Eat immediately.
Why it's gut-friendly: Cucumber is hydrating and contains anti-inflammatory compounds. Sesame oil provides healthy fats. It's a light, refreshing snack that won't upset your stomach.
