Smashed Cucumber with Sesame & Chilli

This is not a recipe. This is an assembly job. Smash a cucumber with a rolling pin (very satisfying), tear it into chunks, and toss with sesame oil, rice vinegar, and a pinch of chilli. It's refreshing, hydrating, and takes about ninety seconds. Perfect for when you want something savoury but can't face cooking.

Ingredients (Serves 1):

  • ½ cucumber
  • 1 tsp sesame oil
  • 1 tsp rice vinegar or lemon juice
  • Pinch of chilli flakes
  • Pinch of salt
  • Sprinkle of sesame seeds

Method:

  1. Put the cucumber on a chopping board. Smash it with the side of a rolling pin or the flat of a heavy knife until it cracks. Tear into bite-sized chunks.
  2. Put the cucumber in a bowl. Add the sesame oil, rice vinegar, chilli flakes, and salt. Toss to coat.
  3. Sprinkle with sesame seeds.
  4. Eat immediately.

Why it's gut-friendly: Cucumber is hydrating and contains anti-inflammatory compounds. Sesame oil provides healthy fats. It's a light, refreshing snack that won't upset your stomach.
