Simple Sourdough with Mashed Avocado & Seeds

Sometimes a snack is just toast. But good toast. Sourdough, properly toasted. Avocado, mashed with a squeeze of lemon. A scatter of seeds. It takes five minutes and feels like you've done something nice for yourself.
Why it's gut-friendly: Sourdough is fermented, making it easier to digest than regular bread. Avocado is packed with fibre and healthy fats. Seeds add extra fibre and minerals.
Ingredients (Serves 1):
- 1 thick slice of sourdough bread
- ½ ripe avocado
- Squeeze of lemon juice
- Pinch of salt
- Pinch of chilli flakes (optional)
- 1 tsp mixed seeds (pumpkin, sunflower, sesame)
Method:
- Toast the sourdough until golden and crisp.
- In a small bowl, mash the avocado with a fork. Stir in the lemon juice and salt.
- Spread generously over the toast.
- Sprinkle with chilli flakes if using, and the mixed seeds.
- Eat immediately, preferably while the toast is still warm.
