Roasted Beet Hummus

Roasted Beet Hummus

A vibrant pink hummus made with chickpeas and a roasted beetroot. It's sweet, earthy, and beautiful. Dip raw vegetables or seed crackers into it.

Ingredients (Serves 2):

  • 1 small cooked beetroot
  • ½ x 400g tin of chickpeas, rinsed
  • 1 tbsp tahini
  • Juice of ½ lemon
  • 1 tbsp olive oil
  • Salt

Method: Blitz everything in a food processor until smooth.

Why it's gut-friendly: Chickpeas and beetroot are prebiotic. Tahini provides healthy fats.
