Rice Cake with Smashed Avocado & Radish

This is the snack for when you want something crunchy, creamy, and a bit peppery. A rice cake topped with smashed avocado and thinly sliced radishes. It's fresh, satisfying, and takes two minutes.

Ingredients (Serves 1):

  • 1 brown rice cake
  • ½ avocado
  • Squeeze of lime juice
  • Salt
  • 2 radishes, thinly sliced
  • Pinch of chilli flakes (optional)

Method:

  1. Mash the avocado with lime juice and salt.
  2. Spread on the rice cake.
  3. Arrange radish slices on top. Sprinkle with chilli flakes if using.
  4. Eat immediately.

Why it's gut-friendly: Avocado is packed with fibre and healthy fats. Radishes are a prebiotic food. Brown rice cakes are whole-grain. A fresh, crunchy snack.
