Peanut Butter & Banana Rice Cakes

This is the snack for when you want something sweet, crunchy, and satisfying but can't face proper cooking. A rice cake, a smear of peanut butter, and slices of banana. It takes one minute. It's the snack I reach for most often.

Ingredients (Serves 1):

  • 1 brown rice cake
  • 1 tbsp peanut butter
  • ½ banana, sliced
  • A drizzle of honey (optional)

Method:

  1. Spread the peanut butter on the rice cake.
  2. Arrange banana slices on top.
  3. Drizzle with honey if you want extra sweetness.
  4. Eat immediately, before the rice cake goes soft.

Why it's gut-friendly: Brown rice cakes are whole-grain. Peanut butter provides protein and healthy fats. Banana adds potassium and natural sweetness.
