Mango & Lime Chia Pot

This is a snack-sized version of chia pudding. Mango blitzed with lime and a little coconut milk, thickened with chia seeds. It's bright, refreshing, and feels like a proper treat. It takes five minutes and sets in the fridge.
Ingredients (Serves 1):
- ½ ripe mango, diced
- Juice of ½ lime
- 100ml coconut milk
- 2 tbsp chia seeds
Method:
- Blitz the mango, lime juice, and coconut milk in a blender until smooth.
- Stir in the chia seeds. Pour into a small glass or jar.
- Refrigerate for at least 2 hours until set.
- Eat chilled.
Why it's gut-friendly: Mango is rich in vitamin C and fibre. Chia seeds are fibre superstars. Coconut milk adds healthy fats. A no-sugar-added snack.
