Mango & Lime Chia Pot

This is a snack-sized version of chia pudding. Mango blitzed with lime and a little coconut milk, thickened with chia seeds. It's bright, refreshing, and feels like a proper treat. It takes five minutes and sets in the fridge.

Ingredients (Serves 1):

  • ½ ripe mango, diced
  • Juice of ½ lime
  • 100ml coconut milk
  • 2 tbsp chia seeds

Method:

  1. Blitz the mango, lime juice, and coconut milk in a blender until smooth.
  2. Stir in the chia seeds. Pour into a small glass or jar.
  3. Refrigerate for at least 2 hours until set.
  4. Eat chilled.

Why it's gut-friendly: Mango is rich in vitamin C and fibre. Chia seeds are fibre superstars. Coconut milk adds healthy fats. A no-sugar-added snack.
