Lemon & Ginger Energy Balls

These are the snack equivalent of a gentle reset button. They live in the fridge. They take ten minutes to make. They taste bright and zingy, and the ginger gives everything a subtle warmth. One or two is enough to bridge the gap between meals without ruining your appetite.

Why it's gut-friendly: Oats provide prebiotic fibre. Ginger is a powerful digestive aid that soothes the stomach. Almonds add healthy fats and protein. Lemon adds freshness.

Ingredients (Makes 10-12 balls):

  • 150g rolled oats
  • 100g almond butter (the drippy kind)
  • 2 tbsp maple syrup
  • Zest and juice of 1 lemon
  • 1 tsp fresh ginger, grated (or ½ tsp ground ginger)
  • Pinch of salt
  • Desiccated coconut for rolling (optional)

Method:

  1. In a food processor, blitz the oats until they form a coarse flour. (Or use oat flour if you have it.)
  2. Add the almond butter, maple syrup, lemon zest, lemon juice, ginger, and salt. Blitz until the mixture comes together in a sticky ball.
  3. If the mixture is too dry, add a teaspoon of water. If too wet, add a few more oats.
  4. Roll into small balls, about the size of a walnut.
  5. Roll in desiccated coconut if you like.
  6. Store in an airtight container in the fridge for up to a week.
