Herby Cottage Cheese & Cucumber Boats

This is an assembly job that looks like you've made an effort. Cucumber halves hollowed out slightly, filled with herby cottage cheese. They're cool, refreshing, and perfect for hot days when you want something savoury but light.
Ingredients (Serves 1):
- ½ cucumber, halved lengthways and seeds scooped out
- 100g cottage cheese
- A handful of fresh chives and dill, chopped
- Black pepper
- A squeeze of lemon juice
Method:
- Mix the cottage cheese with the herbs, black pepper, and lemon juice.
- Spoon into the cucumber boats.
- Eat immediately.
