Greek Yoghurt with Stewed Plums & Toasted Seeds
Share
This is what I make when I have stewed plums in the fridge (see dessert recipe #10) and need something substantial between meals. It's creamy, tart, and satisfying. It feels like a proper pudding but works as a snack.
Why it's gut-friendly: Greek yoghurt is packed with probiotics that support gut health. Plums are rich in fibre and gentle on digestion. Seeds add extra fibre and healthy fats.
Ingredients (Serves 1):
- 150g Greek yoghurt (or coconut yoghurt)
- 2-3 stewed plums with their syrup (from dessert recipe #10)
- 1 tsp mixed seeds (pumpkin, sunflower, sesame)
Method:
- Spoon the yoghurt into a bowl.
- Top with the stewed plums and a drizzle of their syrup.
- Scatter with mixed seeds.
- Eat immediately.
