Like the yoghurt bark, but tangier and even more probiotic-rich. Kefir mixed with a little honey, spread thin, topped with blueberries and almonds, and frozen.
Ingredients (Serves 2):
300ml plain kefir
1 tbsp honey
50g blueberries
1 tbsp chopped almonds
Method: Mix kefir and honey. Spread on a parchment-lined tray. Scatter with berries and almonds. Freeze until solid, then snap into pieces.
Why it's gut-friendly: Kefir is a probiotic powerhouse. Blueberries provide polyphenols. Almonds add fibre and crunch.
