Dark Chocolate Dipped Dried Apricots

Dark Chocolate Dipped Dried Apricots

This is the snack for when you need something sweet but also vaguely nutritious. Dried apricots dipped in melted dark chocolate, with a sprinkle of sea salt. They feel like a treat. They take five minutes. They store well in the fridge.

Ingredients (Makes 10–12):

  • 100g dark chocolate (70% or higher)
  • 1 tsp coconut oil
  • 10–12 dried apricots (unsulphured if possible)
  • Flaky sea salt

Method:

  1. Line a tray with parchment.
  2. Melt the chocolate and coconut oil together gently.
  3. Dip each apricot halfway into the chocolate. Place on the tray.
  4. Sprinkle with a few flakes of sea salt.
  5. Refrigerate until set. Store in the fridge.

Why it's gut-friendly: Dried apricots are a source of fibre and potassium (in moderation). Dark chocolate contains prebiotic polyphenols. A small, satisfying sweet treat.
