Dark Chocolate Dipped Dried Apricots

This is the snack for when you need something sweet but also vaguely nutritious. Dried apricots dipped in melted dark chocolate, with a sprinkle of sea salt. They feel like a treat. They take five minutes. They store well in the fridge.
Ingredients (Makes 10–12):
- 100g dark chocolate (70% or higher)
- 1 tsp coconut oil
- 10–12 dried apricots (unsulphured if possible)
- Flaky sea salt
Method:
- Line a tray with parchment.
- Melt the chocolate and coconut oil together gently.
- Dip each apricot halfway into the chocolate. Place on the tray.
- Sprinkle with a few flakes of sea salt.
- Refrigerate until set. Store in the fridge.
Why it's gut-friendly: Dried apricots are a source of fibre and potassium (in moderation). Dark chocolate contains prebiotic polyphenols. A small, satisfying sweet treat.
