Cucumber & Mint Raita

A cooling Indian side dish that works brilliantly as a snack. Diced cucumber and fresh mint stirred through thick yoghurt. Eat it with a spoon or use raw veg to dip.

Ingredients (Serves 1):

  • 150g Greek yoghurt
  • ¼ cucumber, finely diced
  • A handful of fresh mint, chopped
  • A pinch of ground cumin (optional)
  • Salt

Method: Stir everything together. Eat immediately.

Why it's gut-friendly: Yoghurt is packed with probiotics. Cucumber is hydrating. Mint and cumin are digestive aids.
