Cream Cheese & Cucumber Stacks

This is not a recipe. It's an assembly job. Slices of cucumber, a smear of cream cheese, a sprinkle of dill. It's cool, refreshing, and takes about sixty seconds.
Ingredients (Serves 1):
- ½ cucumber, sliced into thick rounds
- 2 tbsp cream cheese or dairy-free alternative
- A sprinkle of fresh dill or chives
- Salt and pepper
Method:
- Spread a little cream cheese on each cucumber round.
- Top with herbs, salt, and pepper.
- Eat immediately.
Why it's gut-friendly: Cucumber is hydrating. Cream cheese provides a small amount of protein. A light, refreshing snack.
