Carrot & Ginger Energy Balls

A no-bake snack that tastes like carrot cake. Carrot, oats, dates, ginger, and a little coconut. Roll them up and keep them in the fridge.

Ingredients (Makes 10):

  • 1 carrot, finely grated
  • 100g rolled oats
  • 80g Medjool dates, pitted
  • 1 tsp ground ginger
  • 1 tbsp coconut oil
  • Desiccated coconut for rolling

Method: Blitz everything except the coconut in a food processor. Roll into balls, then roll in coconut. Chill.

Why it's gut-friendly: Carrots and oats are prebiotic. Dates provide natural sweetness and fibre. Ginger is anti-inflammatory.
