Carrot & Cucumber Sticks with Hummus

Carrot & Cucumber Sticks with Hummus

Sometimes a snack is just vegetables and hummus. But good hummus. The kind that's creamy and lemony and makes you want to eat an entire tub. This is that. Keep a pot in the fridge and a bag of pre-chopped veg, and you've got a snack that requires zero thought.

Ingredients (Serves 1):

  • 1 carrot, cut into batons
  • ¼ cucumber, cut into batons
  • 2–3 tbsp good-quality hummus
  • Sprinkle of paprika (optional)

Method:

  1. Arrange the veg on a plate.
  2. Spoon hummus into a small bowl. Sprinkle with paprika if you're feeling fancy.
  3. Dip. Eat. Feel vaguely virtuous.

Why it's gut-friendly: Raw vegetables provide prebiotic fibre. Hummus (made from chickpeas and tahini) is packed with fibre and healthy fats. It's a classic gut-friendly combo.
