Carrot & Cucumber Sticks with Hummus
Share
Sometimes a snack is just vegetables and hummus. But good hummus. The kind that's creamy and lemony and makes you want to eat an entire tub. This is that. Keep a pot in the fridge and a bag of pre-chopped veg, and you've got a snack that requires zero thought.
Ingredients (Serves 1):
- 1 carrot, cut into batons
- ¼ cucumber, cut into batons
- 2–3 tbsp good-quality hummus
- Sprinkle of paprika (optional)
Method:
- Arrange the veg on a plate.
- Spoon hummus into a small bowl. Sprinkle with paprika if you're feeling fancy.
- Dip. Eat. Feel vaguely virtuous.
Why it's gut-friendly: Raw vegetables provide prebiotic fibre. Hummus (made from chickpeas and tahini) is packed with fibre and healthy fats. It's a classic gut-friendly combo.
