Almond & Date Energy Balls

These are the snack equivalent of a reset button. They live in the fridge. They take ten minutes to make. They taste like a treat but are just almonds, dates, and a bit of coconut. One or two is enough to bridge the gap between meals.

Ingredients (Makes 10–12 balls):

  • 150g almonds
  • 100g Medjool dates, pitted
  • 1 tbsp coconut oil, melted
  • Pinch of salt
  • Desiccated coconut for rolling

Method:

  1. Put the almonds in a food processor and blitz until they form a coarse meal.
  2. Add the dates, coconut oil, and salt. Blitz until the mixture comes together in a sticky ball.
  3. Roll into small balls. Roll each in desiccated coconut.
  4. Store in the fridge for up to a week.

Why it's gut-friendly: Almonds are rich in fibre and vitamin E. Dates provide natural sweetness and fibre. Coconut oil adds healthy fats.
