Tuna & Cannellini Bean Lettuce Wraps

This is what I make when I want something light, fresh, and protein-packed that doesn't require a fork. Tinned tuna, cannellini beans, lemon, and parsley, scooped into crisp lettuce leaves. It's lunch that feels like finger food.

Ingredients (Serves 1):

  • 1 x 145g tin of tuna in spring water, drained
  • ½ x 400g tin of cannellini beans, rinsed and drained
  • Juice of ½ lemon
  • 1 tbsp olive oil
  • A handful of fresh parsley, chopped
  • Salt and pepper
  • 4–6 large lettuce leaves (cos or Little Gem work well)

Method:

  1. Put the tuna and beans in a bowl. Add the lemon juice, olive oil, parsley, salt, and pepper.
  2. Toss gently to combine. Don't over-mix.
  3. Spoon the mixture into the lettuce leaves. Eat with your hands.

Why it's gut-friendly: Tuna provides lean protein and omega-3s. Cannellini beans are packed with fibre. Lemon and parsley are digestive aids. Lettuce adds crunch and hydration.
