Speedy Prawn & Spinach Coconut Soup

A light, fragrant soup that comes together in about ten minutes. Prawns, spinach, and a coconut milk broth spiked with ginger and lime. It's warming and restorative.
Ingredients (Serves 1 generously):
- 1 tsp coconut oil
- 1 tsp fresh ginger, grated
- 200ml vegetable stock
- 100ml coconut milk
- 100g raw prawns
- A large handful of spinach
- Juice of ½ lime
- Salt
Method:
- Melt the coconut oil in a saucepan. Add the ginger and cook for 30 seconds.
- Pour in the stock and coconut milk. Bring to a simmer.
- Add the prawns and cook for 2–3 minutes until pink. Stir in the spinach until wilted.
- Squeeze in the lime juice and season. Serve immediately.
Why it's gut-friendly: Prawns are a lean protein. Coconut milk is gentle. Ginger and lime are digestive aids.
