Smoked Mackerel & Beetroot Salad with Horseradish Yoghurt

This sounds fancy. It's not. It's smoked mackerel from a packet, pre-cooked beetroot from a vacuum pack, and a quick yoghurt dressing spiked with horseradish. It takes five minutes. It's packed with omega-3s. It looks like you made an effort.
Ingredients (Serves 1):
- 1 smoked mackerel fillet, skin removed and flaked
- 2 pre-cooked beetroot, diced
- A handful of rocket or watercress
- 100g Greek yoghurt
- 1 tsp horseradish sauce (or more, to taste)
- Squeeze of lemon juice
- Salt and pepper
Method:
- Mix the yoghurt with the horseradish, lemon juice, and a pinch of salt and pepper.
- Arrange the rocket on a plate. Top with the beetroot and flaked mackerel.
- Drizzle with the horseradish yoghurt. Eat immediately.
