Smoked Mackerel & Apple Salad

The combination of smoky fish and crisp, sweet apple is a classic for a reason. Toss with a lemony yoghurt dressing and some peppery rocket. Ready in five minutes.
Ingredients (Serves 1):
- 1 smoked mackerel fillet, skin removed and flaked
- 1 crisp apple, cored and thinly sliced
- A large handful of rocket
- 2 tbsp Greek yoghurt
- 1 tsp horseradish sauce (optional)
- Squeeze of lemon juice
Method:
- Whisk the yoghurt with the horseradish (if using), lemon juice, and a pinch of salt.
- Toss the apple slices and rocket with the dressing.
- Top with the flaked mackerel.
Why it's gut-friendly: Mackerel is packed with omega-3s. Apple provides pectin. Yoghurt adds probiotics.
