Simple Smoked Mackerel Pâté on Ryvita

This is not cooking. This is assembly. Smoked mackerel, Greek yoghurt, lemon, and pepper, mashed together until it becomes a creamy, smoky pâté. It takes three minutes. It's packed with omega-3s. Spread it on Ryvita or any sturdy cracker, top with cucumber, and you've got lunch. It feels fancy. It's not.
Ingredients (Serves 1):
- 1 smoked mackerel fillet, skin removed
- 2 tbsp Greek yoghurt
- Juice of ½ lemon
- Black pepper
- Ryvita or oatcakes, to serve
- Sliced cucumber, to serve
Method:
- Flake the mackerel into a bowl. Remove any bones you find.
- Add the yoghurt, lemon juice, and a generous grind of black pepper.
- Mash with a fork until combined but still slightly textured.
- Spread on Ryvita. Top with cucumber slices.
- Eat immediately.
